Have you been curious the construction at the former Nick Tomatoe Pie location? Well, get ready for Bolay — a 100 percent gluten free restaurant whose slogan is “So Fresh, So Bold”. This healthy “fast food” restaurant offers make-your-own “superfoods bowls,” or nutrient-packed food choices of proteins that include chicken, pork, steak, shrimp, ahi tuna and tofu, tossed with a variety of veggies, on a base of noodles, salad, rice, spinach or quinoa.
The first Bolay opened in Wellington Mall in early 2016 by restaurateur Tim Gannon, co-founder of Outback restaurant and his son, Chris. They quickly expanded and currently have locations on Champion Boulevard in Boca Raton, Northlake Boulevard in Palm Beach Gardens, South State Road 7 in Wellington, Okeechobee Bld. in West Palm Beach and also in Pembroke Pines
